Vegan Vanilla cupcakes with Chocolate Frosting and Coconut
I was inspired to make cupcakes by seeing this on My Paper Crane. They looked so delicious so I asked Heidi for the recipe. Self-serve yogurt choices
Saturday was the last day of the cleanse as Sunday you were to ease back into healthy eating and begin week 2 of the challenge. I did pretty good for the rest of the days following the diet. On Saturday, I still ate my oatmeal, brown rice, etc. Ralph wanted to take us for a treat so we went to a frozen yogurt place in downtown Missouri called Yummo. It was designed very cute with a Japanese looking graphic penguin that the kids thought was really cute. The concept is that you pick a cup and dispense your own yogurt into the cup....

Ralph stayed home today because he is getting a cold and has been getting headaches. I dropped the kids off at school and stopped at the Kolache bakery on the way home to get him a treat. I got him one of their famous danish melt-away that I’d heard about and a cheese kolache for free since I had a coupon. He didn’t care for the melt-away but ate the cheese kolache. I made my oatmeal. it is so bland without brown sugar or syrup, but I added cinnamon, mashed bananas and almonds and it was bearable. I am really enjoying the warm water with lemon. It is soothing to my system. I thought the lemon would be too sour on an empty stomach but it’s not. I was never able tot drink orange juice on an empty stomach because it just tears it up, but the lemon is different. I remember my grandpa would always drink a warm glass of water 1st thing in the morning when he would come to visit. He said that it got his organs going.
